Shiraz origins

Syrah has a long documented history in the Rhne region of Southeastern France, and it was not known if it had originated in that region. In 1998, a study conducted by Carole Meredith’s research group in the Department of Viticulture and Enology at University of California, Davis used DNA typing and extensive grape reference material from the viticultural research station in Montpellier, France to conclude that Syrah was the offspring of the grape varieties Dureza (father) and Mondeuse Blanche (mother).

Dureza is a dark-skinned grape variety from the Ardche region in France that has all but disappeared from the vineyards, and the preservation of such varieties is a speciality of Montpellier. Mondeuse Blanche is a white grape variety cultivated in the Savoy region, and is still found in very small amounts in that region’s vineyards today. Both varieties are somewhat obscure today and have never achieved anything near Syrah’s fame or popularity, and there is no record of them ever having been cultivated at long distances from their present home. Thus, both Syrah’s parents come from a limited area in southeastern France, very close to northern Rhne. Based on these findings, the researchers have concluded that Syrah originated from northern Rhne.

The DNA typing leaves no room for doubt in this matter, and the numerous other hypotheses of the grape’s origin which have been forwarded during the years all completely lack support in form of documentary evidence or ampelographic investigations, be it by methods of classical botany or DNA.

Instead, they seem to have been based primarily or solely on the name or synonyms of the variety. Because of varying orthography for grape names, especially for old varieties, this is in general very thin evidence. Despite this, origins such as Syracuse or the Iranian city of Shiraz have been proposed.[6]

The parentage information does however not reveal how old the grape variety is, i.e., when the pollination of a Mondeuse Blanche vine by Dureza took place, leading to the original Syrah seed plant. In the year AD 77, Pliny the Elder wrote in his Naturalis Historia about the wines of Vienne (which today would be called Cte-Rtie), where the Allobroges made famous and prized wine from a dark-skinned grape variety that had not existed some 50 years earlier, in Virgil’s age.[7] Pliny called the vines of this wine Allobrogica, and it has been speculated that it could be today’s Syrah. However, the description of the wine would also fit, for example, Dureza[2] and Pliny’s observation that the vines of Allobrogica was resistant to cold is not entirely consistent with Syrah.

Know Your Spanish Cheese

You can purchase two types of Manchego cheese. One is made from unpasteurized milk, and is the farm house type, while the commercial type is made from pasteurized milk. What ever type you decide to buy, you won’t be wrong, just keep in mind it has to be made from whole sheep’s milk from Manchega. Quince and manchego skewers are made super easily, and are a real treat. If you’re not experienced in the kitchen, this one’s for you! Take a pound of quince paste, a cup of almonds (roast them and chop finely), a pound of manchego, and a bunch of watercress. Cut the paste into 1 inch cubes and roll it in almonds. Cut the manchego into cubes f the same size. Take a toothpick, put the paste on it, then a watercress leaf, and then manchego.

Spanish cheese called Torta del Casar is something cheese aficionados are crazy about. However due to its price it is not easily obtainable, and some people get a chance to taste it only once. It is definitely on of the most expensive Spanish cheeses. It comes from Extremadura. Its interior is buttery and as it ripens it gets more and more molten. This adds the aromas of truffle and mushroom, and a tone of bitterness.

Valdeon is a Spanish type of cheese made of cow’s milk, and is one of the most appreciated blue cheeses of Spain. Some say it’s not piquant enough, but others disagree. What ever your tastes cheese wise may be, you should try it, because it’s delicious. Valdeon is wrapped in leaves, which distinguishes it from cabrales (many people confuse the two), as it is wrapped in foil. With strong flavor and creamy texture it may surprise fans of young, mild cheeses.

Mahon comes all the way from the island of Menorca, which is settled in the Mediterranean. This is one of the rare cheeses that is still made with the same intensity both in great cheese factories and on small family farms. If you want to try it at its best (say cheese lovers who love the strong flavor), look for wheels of it which were left to age for several months. Its exterior is usually rubbed with either butter or olive oil, and for aesthetic reasons, some add paprika to it.

Another intriguing point about La Mancha is that it is mention several times from the book Don Quixote, in addition to Manchego Cheese! As soon as Manchego Cheese is left to age for only 2 weeks, it is fresh and young and referred to as Manchego Fresco.

Blueberry, Pear and Apricot Salad With Almonds

Makes 12 Servings

1 can (15 ounces) Bartlett pear halves in extra-light syrup

1 can (81/4 ounces) Bartlett pear halves in extra-light syrup

1 can (15 ounces) blueberries in light syrup

1 can (83/4 ounces) apricot halves in extra-light syrup

Juice of 1 small lemon

1/2 cup sliced almonds, roasted

Drain both cans of pear halves; slice into bite-sized pieces. Drain apricots; halve. Drain blueberries; divide among salad plates and arrange; arrange pears and apricots as well. Top salads with lemon juice and almonds; serve.

Barbecued Pear and

Chicken Kabobs

Makes 4 Servings

1 can (15 ounces) Bartlett pear halves

1/2 cup bottled barbecue sauce

2 tablespoons honey

1 tablespoon Dijon mustard

1 clove garlic, minced

8 kabob skewers

1 red, green or yellow sweet bell pepper, cut into 11/2-inch squares

1 pound boneless, skinless chicken breasts or thighs, cut into 11/2-inch chunks

Preheat grill or broiler. Drain pears, reserving juice. Cut pears into 11/2-inch chunks; set aside. In a bowl, stir together barbecue sauce, honey, mustard, garlic and 3 tablespoons of the reserved pear juice. On 4 skewers, alternate the pear and bell pepper pieces.

On remaining skewers, place chicken pieces. Brush all skewered ingredients liberally with the sauce mixture. Grill chicken skewers over medium coals for 10 minutes (or broil for 5 minutes), brushing occasionally with sauce.

Add pear-pepper skewers; grill for 5 to 7 minutes (or broil 2 to 4 minutes) more, or until chicken is no longer pink and pears and peppers are heated through. Serve one chicken kabob and one pear kabob per serving.
